We still have acorn and buttercup squash. They’ll work just fine if you decide to try this recipe.

Baked Carnival Squash with Bacon
This fills the house with a wonderful fragrance

1 Carnival squash (you may sub acorn)
Pepper, to taste, lightly sprinkle
6 slices smoked bacon, diced
2 tbls olive oil
1 garlic clove, minced
1/5 tsp nutmeg (generous sprinkle)
1/5 tsp cloves (generous sprinkle)
2 tsp maple syrup or honey (you may sub 1 tsp sugar)

Preheat oven to 375.

Wash squash and dice into sections. Remove seeds and fibers. Cut into chunks.
Place cut side up on foil lined cookie sheet or baking tray skin side down. I sliced off the bottom of some pieces so they didn’t roll over.
Mix bacon, olive oil, garlic, nutmeg, cloves, pepper, and maple syrup or honey.
Place mixture into the center of each chunk and bake for 30-45 mins (depending on the size of your chunks) until tender.
