Veggie Frittata – Gluten free

6 eggs, beaten
1-ounce Parmesan, grated (I have also used cheddar and mozzarella)
1//2 teaspoon black pepper
Pinch salt
1/2 cup chopped red and orange peppers
1/4 cup of green and red onion
1/2 cup chopped mushrooms
1 tomato sliced up

Preheat oven to 375F

In medium size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Add balance of ingredients except tomato. Butter a 9” pie plate and pour egg mixture into pie plate add sliced tomato to the top. Place in oven and cook for 20 minutes @ 375F or until done.
