Onion Soup with Apple Cider and Thyme

1.5# onions cut into thin slices
4 T. butter
1.5 c. chicken broth
1.5 c. fresh apple cider
1 tsp. dried thyme or 5 sprigs fresh
1 c. grated cheese

Cook onions in butter until softened, about 10 minutes.

Add broth, cider & thyme. Stir well. Bring to a boil. Reduce heat and cook, stirring often, until the onions are very soft, @ 25 minutes. Add salt & pepper to taste.

Serve as is with grated cheese or puree in a food processor, then top with cheese.
