Aunt Keenie’s Layer Salad

1 layer lettuce, chopped
1 layer onion, chopped
1 layer celery, chopped
1 can drained, sliced water chestnuts
1 layer frozen peas (frozen!)
1 ¾ C. mayonnaise
3 T. sugar
½ C. chopped hard boiled eggs
¼ C. cooked bacon, crumbled
½ C. tomatoes, chopped
¼ C. shredded cheese

Layer ingredients one on top of the other from the lettuce to the frozen peas. In a separate dish mix the mayonnaise and sugar. Spread over the layered vegetables, covering them completely. Cover and refrigerate at least 12 hours. Several hours before serving add a layer of chopped hard boiled eggs, bacon, tomatoes and finally cheese. DO NOT TOSS! Seal tightly until ready to serve. Freely add or delete ingredients to taste.
